200 g of white chocolate
1 organic lime
3 dl whole liquid cream
2 egg whites

Steps

Step 1

Melt the white chocolate in a warm bain-marie or 2-3 min in the microwave medium power, after 1 min, monitor every 30 s (see also Handshake "Melt ..."). Turn to smooth, let cool to room temperature.

2nd step

Whip the egg whites into very firm snow. Whip the very firm mousse cream (see "For a cream ..."). Mix the whipped cream with the white chocolate, then the snow. Divide into 4 individual molds. Place 2 hours in the fridge. Take the zest of lemon in thin strips. Just before serving, lay on the mosses.
