The properties of isomalt
Made from sucrose, isomalt is a sweet sweetener used as a substitute for table sugar for its many properties, including its sweetening power and its caloric level twice as low (1 gram of isomalt equivalent to 2 calories, against 4 for sucrose). While it is also recommended for better dental hygiene because it reduces the carious risk, isomalt is best known for its ability to keep its glossy and transparent appearance, even heated to 100 degrees. Isomalt, how to consume it
Isomalt is actually mainly eaten occasionally, on the cakes we eat. It is for example in the form of spun sugar, tile or transparent tape.
