Steps

Trout rolls with fresh leeks

1 Open the leek in 2 in length. Eliminate the ends. Detach the most beautiful leaves of the turn (7 or 8), plunge them 4-5 min in salted boiling water. Drain. Spread on a cloth, face very smooth underneath.

2 Work the cheese with a fork to soften it. Spread it on the leaves, up to 2 cm from the ends. Put a piece of trout on each leaf, letting it pass a little. Wrap tight, stand upright on a nice dish or several small ones. Pepper lightly; pour a few drops of lemon into each roll.
