600 g fresh salmon
2 apples
100 g raisins
lemon juice
2 tbsp. to s. olive oil
50 g of mesclun
12 fresh grapes
Salt l Cayenne pepper


Raspberry sauce
3 tbsp. to s. raspberry vinegar
50 g raspberries
100 g of white cheese 0%

Steps

Step 1

Detail the salmon in small dice.
Peel the apples , cut them in small dice.

2nd step

Mingle salmon, apples, raisins, lemon juice, olive oil, add salt and pepper.
Mold in circles, reserve cool .

Step 3

For the sauce: mix the fromage blanc with raspberries and vinegar.

Step 4

Arrange the salmon on a plate, add a bouquet of mesclun and a few grains of grapes. Decorate with the sauce.
